Local Flavors...featuring Santa Fe Cantina
The Santa Fe Cantina has unfortunately closed--it was one of my favorite spots for a casual dinner and to get my fix for New Mexican cuisine. It was one of those hidden gems frequented by locals and visitors in the know. While it is no longer open, at least we have ceviche!
MAHIMAHI CEVICHE
Ingredients
| 1 lb. | Mahimahi, diced | |
| 1 lb. | Limes, juiced |
Method:
| * | Combine the two ingredients, marinate fish for 1 hour. | |
| * | Drain off excessive liquid after the fish has marinated |
Add:
| 3 | Cloves Garlic, minced | |
| 1 | Maui Onion, diced | |
| 2 | Jalapenos, diced fine | |
| 2 oz. | Cilantro, chopped | |
| 1 lb. | Tomatoes, diced | |
| 1/4 cup | Olive Oil |

| * | Combine all ingredients and enjoy! |
