Local Flavors...featuring Santa Fe Cantina
Maui is known for it's stunning beaches, challenging golf courses, and lush tropical climate, but perhaps its most heavenly treasures are the world class restaurants and inventive cuisine you'll find in every little town across the island. It is my hope to bring to you a variety of recipes courtesy of some of the best chefs on the island.
The Santa Fe Cantina is one of my favorite spots for a casual dinner and to get my fix for New Mexican cuisine. It's one of those hidden gems frequented by locals and visitors in the know. We often stop in just before a movie, or when we want a satisfying breakfast of Huevos Rancheros or Chilaquiles before we stroll around Lahaina town. The Queso is a delicious appetizer, the fresh salads wonderful, and they have everything under the Lahaina sun: from Burritos to Chile Rellenos to Pork Al Pastor, and the famous Nundy.
So for a little taste of New Mexico, Maui Style, whip up a nice cold Margarita and this fantastic ceviche:
MAHIMAHI CEVICHE
Ingredients
| 1 lb. | Mahimahi, diced | |
| 1 lb. | Limes, juiced |
Method:
| * | Combine the two ingredients, marinate fish for 1 hour. | |
| * | Drain off excessive liquid after the fish has marinated |
Add:
| 3 | Cloves Garlic, minced | |
| 1 | Maui Onion, diced | |
| 2 | Jalapenos, diced fine | |
| 2 oz. | Cilantro, chopped | |
| 1 lb. | Tomatoes, diced | |
| 1/4 cup | Olive Oil |
Method:
| * | Combine all ingredients and enjoy! |
