Lahaina Grill Logo sunken chocolate cake

 

SUNKEN CHOCOLATE CAKE
Serves 12 

 

INGREDIENTS:

12 oz  Butter 
3/4 cup     Sugar
15 oz Semi-Sweet Chocolate
12 Egg Yolks
Egg Whites 
   

METHOD:

*              Melt butter and chocolate in a double boiler 
* Whisk 12 egg yolks and 6 tbsp. sugar until pale. 
Stir in chocolate and butter mixture. 
Whisk egg whites until soft peaks form, add remaining sugar and whisk until stiff and shiny. 
Butter large muffin tins and sprinkle with sugar. 
Fill 3/4 with the mixture. 
* Bake at 350 degrees for 15 minutes with the fan on, then another 5-7 minutes with no fan.
* Cool in the pan and remove with butter knife.
* Do not refrigerate during service.
